Feeling a little peckish after all that? Why not have a go at these easy peasy and utterly yummy shortbread biscuits, perfect for all the family to enjoy.

Easy Peasy Shortbread Biscuits

(makes approx. 24 biscuits)

You Will Need:

200g of softened butter (unsalted)

200g of caster sugar

400g of plain flour

1 large egg

½ tsp of vanilla extract

Utensils:

A large mixing bowl

Weighing scales

Large baking sheet or tray

Baking paper

Electric mixer

Rolling pin

Cookie cutters

Lets Bake:

  1. Heat the oven to 200 degrees C and line a baking sheet with baking paper.
  2. Measure out the butter, place it in the mixing  bowl, then beat it with an electric mixer until it is soft and fluffy.
  3. Next, measure out the remaining ingredients; beat in the sugar, egg and vanilla extract then lastly mix in the flour to make a firm biscuit dough. If the dough still feels a bit sticky, add a little more flour and gently knead it in.
  4. Roll the dough out onto a well floured surface using a rolling pin until it is around 2.5/ 3cm thick - kids usually love to get involved with this!
  5. Take a cookie cutter and cut out the shapes from the dough. If you don’t have a cookie cutter, you could use the upturned rim of a glass to cut out rounds.
  6. Place your biscuits onto the baking tray.
  7. If you like, little ones can make patterns or shapes on the top of the biscuits - such as a letter, number, a fork print or even stamp clean toys such as lego to make interesting prints.
  8. Bake in the oven for 10/12 minutes or until the edges start to turn golden.
  9. Leave to cool for 10 minutes on a wire rack.
  10. Serve to hungry little (and big) eaters.
  11. Any leftovers will keep for up to 3 days in a sealed container.
